    Method

    1. 1

      Place egg in a pan of cold water, bring up to a boil and set a timer for 6/7 minutes.

      Once cooked submerge the egg in cold water, peel and slice.

      Slice the avocado and beetroot.

    4. 4

      Spread the Ryvita with the Philadelphia Light top with the avocado, beetroot and then the egg. Finish with fresh mint leaves.

    5. PRO TIP 

      For a protein-boosted twist, this recipe can also be made with Philadelphia Protein.
