Rinse the shrimp and pat dry. Heat 1 tbsp olive oil in a pan and cook the shrimp for 2–3 minutes. Season with salt and pepper.

For the salsa, wash and dry the apple and cucumber. Quarter the apple, remove the core, and dice finely. Halve the cucumber, scrape out the seeds with a spoon, and cut into small cubes. Slice the spring onion into thin rings. Mix everything in a bowl with the remaining olive oil, a pinch of salt, pepper, and lime juice.

Spread Philadelphia Mexican Style on the bread slices and top with shrimp and the apple-cucumber salsa. Sprinkle with cress and serve.
