Method
1
Preheat the oven to 200 °C (390 °F) using the conventional setting (top/bottom heat). Line a baking sheet with parchment paper. Unroll the pizza dough and use a cutter to form 16 circles (approx. 8 cm in diameter). Place the mini pizza bases on the baking sheet and brush them with olive oil.
2
Bake the pizza bases in the middle of the preheated oven for 15-20 minutes, until golden. Meanwhile, wash and dry the cherry tomatoes, cut them in half, and place them in a small ovenproof dish. Add the remaining olive oil, salt, pepper, and herbs (rosemary and thyme). Toss to coat and roast the tomatoes in the middle of the oven for 20-25 minutes.
3
Remove the pizza bases from the oven and let them cool slightly. Spread each base with the Philadelphia with Garlic & Herbscream cheese and top with the roasted tomatoes. Coarsely chop the pistachios and sprinkle them over the mini pizzas.
Add even more fresh herbs to taste.PRO TIP
